Chilled Cucumber Yogurt Soup
A cool, herby soup for the hottest days: cucumber, dill, mint, and a spoon of ice-cold yogurt.

On the days when even the kettle feels like too much, this cold soup asks almost nothing of you and gives everything back.
Ingredients
Blend, chill, and serve with a swirl of olive oil. The garlic mellows dramatically in the fridge.
Make it a meal
Serve with toasted pita, olives, and a tomato salad.
How to make it
- 1
Blend everything until smooth and pale green.
- 2
Chill at least 1 hour so the flavors settle and the garlic mellows.
- 3
Serve in small glasses with olive oil and dill.
Serving notes
Serve with a torn heel of good bread, a green salad sharp with lemon, and a glass of something cold. Leftovers reheat beautifully with a splash of pasta water.

Reader notes
Made this on a Tuesday and my whole family went quiet at the table. The highest compliment.
Really lovely. I added a pinch of chili flakes for heat and it worked beautifully.
The instructions were clear and the timing was accurate.
This tasted like something from a little neighborhood trattoria. Simple, cozy, and very repeatable.
I appreciated the exact visual cues. Mine came out right on the first try.
